16 CONDITIONS OF PARTICIPATION A limited number of individual exhibitors are permitted to take part in the Culinary Art Show. The selection is based on previous achievements at culinary exhibitions, which must be submitted, in writing, to the Schweizer Kochver- band (forms may be obtained from the Schweizer Kochver- band). The invitations to individual exhibitors to partici- pate at the Culinary Art Show are issued by the Schweizer Kochverband. The exhibition categories may be selected as follows: Culinary Art Programme or Pastry Art Programme or Culinary Art Showpieces All participants must complete all parts of the exhibition programme individually according to the competition regulations. INTERNATIONAL CULINARY ART EXHIBITION PROGRAMME Each individual exhibitor must present the specialist international jury with the following programme. As a matter of principle, all planned hot exhibits must be presented cold at the Cold Culinary Art Show. The basic rules of classic culinary art and of service must be respected. Pastry Art Programme • 4 kinds of different friandises/fancy pastries or pralines for 6 persons (weighing 6–14 g). • 3 desserts (1 chocolate, 1 fruit and 1 own creation). Culinary Art Programme • 3 hot hors d’oeuvres presented on plates. • A 4-course festive menu. • 2 main courses with the chief components of salt-water fish and butcher‘s meat. Individual exhibitors
